The exact steps depend on what version of Acrobat you have. To change the password of a digital ID (not signature) file, select> Edit > Preferences > Signatures > Identities & Trusted Certificates > More
and under "Digital IDs" select the one you want and select "Digital ID Files" and you should see where it says "Change Password" item.
